Fresh blueberries help with balance and are perfect for Vatas. This blueberry pie will also help balance Pittas in the summer because it has sweetness. This recipe is based on one from my Grandmother from North Carolina, so it's really more of a tart. Portions were smaller in the 1920s, but I still love this pie. Blueberries and lemons go very well together, and this fail-safe recipe is one of my favorites. Ground almonds and whole wheat in the crust help balance Kaphas. If you make this pie in the morning before the house heats up in the summer you'll have a wonderful surprise waiting for you in the afternoon or evening. Ingredients:Crust can be made in a food processor:
2 Tbs finely ground raw almonds
1 c. whole wheat four
1/4 c. white flour
1/4 t. salt
1/3 stick cold butter
4-6 Tbs ice water
juice of 1 lemon 2 / 3 cups sugar, 1 / 2 t. salt 1 1/2 T butter 2 1/4 cups blueberries 2 T. cornstarch 1 T. flour Directions:
Preparation time: 1 hour with baking Serves: 6 - 8
For Individual Doshas (What's a Dosha?)Vatas: Use 1 stick of butter and less ice water; top with whip cream.
Pittas: Use 1 /2 lemon juice, allow pie to cool completely.
Kaphas: Enjoy slightly warm.
