Lemon Poppy Seed Muffins

These muffins are a great way to begin a crisp fall morning. Baked goods and a fire are a sure way to warm your heart and keep cozy as the season gets colder. The sour in the lemons will help balance the Vata season.

Ingredients:

2 cups flour (half white, half wheat)
3 T poppy seeds
2 1/2 t baking powder
1/2 t baking soda
1/4 t salt
Wet Ingredients:
2 eggs
1 T grated lemon zest
1/2 cup unsweetened applesauce (3 small apples peeled and cored and cooked 5 min)
1/2 cup blended lowfat cottage cheese
1/2 cup brown sugar
1/4 cup canola oil
1/4 t lemon oil

Directions:

  1. Preheat oven to 350*F and set rack in middle. Oil 12 muffin tin.
  2. Put cottage cheese and cooked apples (or applesauce) in food processor until creamy.
  3. Whisk eggs, add apple cottage cheese mixture and other wet ingredients.
  4. Add dry ingredients and mix gently until thoroughly wet. Don't overmix.
  5. Divvy the batter evenly into the muffin pan. Bake 25 minutes.
  6. Cool 5 minutes and enjoy!
Preparation time: 35 minutes Serves: 6 people - 2 muffins each

For Individual Doshas

Vatas: Top with Ghee.
Pittas: Glaze with 2 T fresh lemon juice mixed with 1/2 cup powdered sugar.
Kaphas: Do some pranayama like breath of fire and alternate nostril breathing while the muffins are cooking.
