These muffins are a great way to begin a crisp fall morning. Baked goods and a fire are a sure way to warm your heart and keep cozy as the season gets colder. The sour in the lemons will help balance the Vata season. Ingredients:2 cups flour (half white, half wheat)
3 T poppy seeds
2 1/2 t baking powder
1/2 t baking soda
1/4 t salt
Wet Ingredients:
2 eggs
1 T grated lemon zest
1/2 cup unsweetened applesauce (3 small apples peeled and cored and cooked 5 min)
1/2 cup blended lowfat cottage cheese
1/2 cup brown sugar
1/4 cup canola oil
1/4 t lemon oil
Directions:
Preparation time: 35 minutes Serves: 6 people - 2 muffins each
For Individual DoshasVatas: Top with Ghee.
Pittas: Glaze with 2 T fresh lemon juice mixed with 1/2 cup powdered sugar.
Kaphas: Do some pranayama like breath of fire and alternate nostril breathing while the muffins are cooking.
